Cagliari, south Sardinia, the wonderful capital of this island. Here you can discover the ancient recipe of the delicious culurgiones pasta.
Host by the talented Damiano and his sister you will learn a recipe that has been handed down for generations and learned by Damiano from his grandma since childhood. You will be given a so-called "scivedda" (container) and shown how to prepare the pasta.
After that you will prepare the filling before tasting all the ingredients. The dough (previously put to rest) will then be processed and the typical closing of the culurgiones "a spighedda" (in the shape of an ear) will begin.
After the closing of all the culurgiones everyone will sit at the table to enjoy the appetizers with a glass of wine, while the water will be boiled for the big meal.
The culurgiones recipe comes from Damiano's grandmother who occasionally prepares culurgiones at home with the whole family on Sunday or during holidays. The original culurgiones recipe belongs to the Ogliastra province (south-east of Sardinia) where each country has its typical recipe. During this lab you will learn the culurgiones recipe from the town of Jerzu.
